These croissants with jam are a delightful treat, perfect for breakfast or a sweet snack. Made with buttery, flaky spelt dough, each croissant is filled with a spoonful of your favorite jam and baked to golden perfection. Light, crunchy on the outside, and soft on the inside, they’re a simple yet irresistible indulgence. Enjoy them warm, dusted with powdered sugar for an extra touch of sweetness!
CRUNCHY CROISSANTS WITH JAM
Ingredients (24 pieces):
- 250g spelt flour
- 125g cold butter
- 15g powdered sugar
- 2 egg yolks
- 50g sour cream (18%)
- A pinch of salt
- Jam (hard)
Preparation:
All the ingredients for the croissants should be chilled.
- In a bowl, mix the spelt flour with a pinch of salt, powdered sugar, butter, egg yolks, and cream.
- Place all the ingredients into a mixing bowl and mix until combined. Then, knead the dough with your hands until smooth.
- Wrap the dough in plastic wrap and refrigerate for 1 hour.
After an hour, remove the dough from the fridge and divide it into 2 parts. Keep one part of the dough chilled in the fridge while you work with the other part.
- Preheat the oven to 180°C (350°F) with top and bottom heat.
- Roll out the dough into a large circle.
- Use a sharp knife to divide the circle into 12 equal wedges (triangles).
- Place about half a teaspoon of jam at the base of each triangle.
- Roll up the triangles from the wide end towards the point, shaping them into croissants. Slightly bend the edges of the rolled croissants to give them their classic shape.
- Arrange the croissants on a baking tray lined with parchment paper.
- Place the baking tray in the preheated oven and bake for 15-25 minutes, or until golden brown (baking time may vary depending on your oven).
Repeat the process with the second half of the dough.
- Once the croissants are baked and cooled, dust them generously with powdered sugar.
