Spelt Crepes

Enjoy a healthier take on traditional crepes with spelt flour, known for its nutty flavor and nutritional benefits. Made with simple ingredients like goat's milk and cinnamon, these crepes are light, delicious, and perfect for breakfast or a sweet treat. Top them with caramelized apples, jam, or sweet cheese.

Ingredients:

250 ml (110 g) of white spelt flour

A pinch of salt

1/2 teaspoon of cinnamon

A pinch of galangal (optional)

A pinch of bertram (optional)

2 eggs

300 ml of goat's milk

2 tablespoons of sunflower oil

 

Preparation:

In a bowl, combine the flour, salt, and cinnamon. Crack in the eggs and add one-third of the milk. Mix the ingredients using a whisk or mixer, gradually incorporating the remaining milk. Once smooth, stir in the oil. Heat a pan well, then pour in a portion of the batter, swirling it to spread across the surface. Cook until lightly or more browned to your liking, then flip and cook the other side. Repeat the process for the remaining batter. Serve with caramelized apples, jams, fruits or sweet cheese.
