Creamy Tuna Salad with Fennel, Celery.
Fresh, crunchy, creamy, and aromatic, this tuna salad combines flaky tuna with crisp celery, delicate fennel, fresh chives, and a rich homemade egg mayonnaise. Galangal and bertram add an earthy, warming layer of flavor, while lemon brings everything together.
Ingredients
For the Tuna Salad
- 1 can (7 oz) tuna, drained
- 3 celery stalks, finely diced
- 1 small fennel bulb, finely diced
- 1 egg, hard-boiled and chopped
- 2 tablespoons fresh chives, finely chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Galangal, to taste
- Bertram, to taste
For the Homemade Egg Mayonnaise
- 2 hard-boiled eggs
- 2 tablespoons Greek yogurt or sour cream
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Fresh lemon juice, to taste
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
1. Make the Homemade Egg Mayonnaise
Place the 2 hard-boiled eggs in a food processor or blender. Add the Greek yogurt or sour cream, Dijon mustard, honey, and lemon juice.
Blend until smooth and creamy. Season with salt and pepper, then taste and adjust the lemon juice as needed.
2. Season the Tuna
Place the drained tuna in a medium bowl and gently break it apart with a fork.
Season with salt, freshly ground black pepper, galangal, and bertram. Add the spices gradually, tasting as you go so their aromatic flavors complement rather than overpower the tuna.
3. Add the Vegetables and Chives
Add the finely diced celery and fennel, followed by the chopped hard-boiled egg and fresh chives.
Gently fold the ingredients together.
4. Add the Homemade Egg Mayo
Add the egg mayonnaise gradually, folding gently until the salad reaches your preferred consistency.
Taste and adjust the seasoning with more salt, pepper, galangal, bertram, or lemon juice if needed.
5. Chill and Serve
Refrigerate for 15–30 minutes before serving. This short resting time allows the flavors to come together.
Garnish with additional chopped chives and a few fennel fronds, if desired.
