Energy bites (No-Bake Cookies of Joy)
Inspired by St. Hildegard of Bingen and her famous Cookies of Joy, these no-bake energy bites are my modern twist on a traditional recipe.
Hildegard valued aromatic spices such as cinnamon, nutmeg and cloves, and recommended ingredients including almonds and dates. While dates, cranberries, pumpkin seeds and almond butter are not part of the original Cookies of Joy recipe, they bring natural sweetness and a delicious twist to this contemporary creation.
Simply blend, roll into little balls and coat with cocoa, coconut, nuts or chocolate. A delicious, naturally sweet treat inspired by Hildegard's wisdom and made for modern living!
A little taste of tradition, with a modern twist.

- Blend everything in a food processor until a sticky, well-combined mixture forms.
- With slightly wet hands, roll the mixture into small balls to prevent it from sticking.

- For an extra surprise, place a whole almond or another nut in the centre of each ball.
- Refrigerate for at least 1 hour to allow the balls to firm up.
