Jam-filled Spelt Semolina Cookies

Spelt semolina cookies are a personal favorite of mine! The spelt semolina and flour give them a wonderful texture—crispy on the outside and soft on the inside. Topped with a bit of sweet jam, they’re the perfect little treat.

Jam-filled Spelt Semolina Cookies

Ingredients:

1 1/2 cups spelt semolina

1 1/2 cups spelt flour (650 type)

1 cup cane sugar

100g butter, softened

2 eggs

1 teaspoon baking powder

2 teaspoons sour cream

Jam of your choice (for filling)

Instructions:

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the spelt semolina, spelt flour, baking powder, and cane sugar. Stir until well mixed. Add the eggs, softened butter, and sour cream to the dry ingredients. Mix everything together until a soft dough forms. Take small portions of the dough and roll them into balls. Gently flatten each ball, then use your thumb or a spoon to create a small indentation in the center of each cookie. Place the shaped cookies on the prepared baking sheet. Spoon a small amount of jam into the hole of each cookie. For extra crispness, you can refrigerate the cookies for about 15 minutes before baking. Bake the cookies in the preheated oven for about 15 minutes or until the edges are lightly golden. Once baked, remove from the oven and allow to cool slightly before enjoying these delightful jam-filled treats!
