Spelt and Chestnut Cookies
Ingredients:
- 250 ml chestnut flour
- 250 ml spelt flour
- 2 tablespoons cocoa powder
- ¼ teaspoon baking soda
- A pinch of salt
- 113 g butter
- ¾ cup powdered sugar
- ½ teaspoon vanilla extract
- 3-4 tablespoons milk
Instructions:
- In one bowl, mix the chestnut flour, spelt flour, cocoa powder, baking soda, and salt.
- In a separate bowl, cream the butter with the powdered sugar and vanilla extract.
- Add the dry ingredients to the butter mixture and mix with a mixer until combined. If the dough is too crumbly, add 3-4 tablespoons of milk and mix until smooth.
- Roll out the dough and cut out cookies using cookie cutters.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake at 180°C (355°F) for 12 minutes.
- After baking, let the cookies cool on a wire rack.
