Spelt and Chestnut Cookies

Spelt and Chestnut Cookies

Ingredients:

  • 250 ml chestnut flour
  • 250 ml spelt flour
  • 2 tablespoons cocoa powder
  • ¼ teaspoon baking soda
  • A pinch of salt
  • 113 g butter
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 3-4 tablespoons milk

Instructions:

  1. In one bowl, mix the chestnut flour, spelt flour, cocoa powder, baking soda, and salt.
  2. In a separate bowl, cream the butter with the powdered sugar and vanilla extract.
  3. Add the dry ingredients to the butter mixture and mix with a mixer until combined. If the dough is too crumbly, add 3-4 tablespoons of milk and mix until smooth.
  4. Roll out the dough and cut out cookies using cookie cutters.
  5. Place the cookies on a baking sheet lined with parchment paper.
  6. Bake at 180°C (355°F) for 12 minutes.
  7. After baking, let the cookies cool on a wire rack.
