Spelt Coffee Cookies

Ingredients (for 40 cookies):
• 200 g very soft butter (at room temperature)
• 2/3 cup powdered sugar
• 1 teaspoon vanilla extract
• 2 egg yolks
• 2 tablespoons spelt instant coffee powder - Naturata Spelt Coffee
• 1 and 3/4 cups spelt flour - check out our flour collection
• 2 tablespoons potato flour

Instructions:

  1. Place the soft butter in a bowl, add the powdered sugar, and mix until the mixture is light and fluffy. Then add the egg yolks and mix until well combined.
  2. Add the instant coffee powder and vanilla extract to the butter mixture, and mix again.
  3. Sift the spelt flour and potato flour together, then gradually mix them into the dough.
  4. Line a baking tray with parchment paper and use a spoon to shape the dough into small balls (like ice cream scoops), then gently flatten each with a fork.
  5. To help the cookies maintain their shape while baking, you can chill them in the fridge for about 20 minutes before baking.
  6. Preheat the oven to 180°C (350°F), with heat from both the top and bottom, and bake the cookies for 8-10 minutes.
  7. Once baked, let the cookies cool on a rack.
