Spelt Coffee Cookies
Ingredients (for 40 cookies):
• 200 g very soft butter (at room temperature)
• 2/3 cup powdered sugar
• 1 teaspoon vanilla extract
• 2 egg yolks
• 2 tablespoons spelt instant coffee powder - Naturata Spelt Coffee
• 1 and 3/4 cups spelt flour - check out our flour collection
• 2 tablespoons potato flour
Instructions:
- Place the soft butter in a bowl, add the powdered sugar, and mix until the mixture is light and fluffy. Then add the egg yolks and mix until well combined.
- Add the instant coffee powder and vanilla extract to the butter mixture, and mix again.
- Sift the spelt flour and potato flour together, then gradually mix them into the dough.
- Line a baking tray with parchment paper and use a spoon to shape the dough into small balls (like ice cream scoops), then gently flatten each with a fork.
- To help the cookies maintain their shape while baking, you can chill them in the fridge for about 20 minutes before baking.
- Preheat the oven to 180°C (350°F), with heat from both the top and bottom, and bake the cookies for 8-10 minutes.
- Once baked, let the cookies cool on a rack.
