Why Bake Spelt Cookies with Farmer's Cheese and Apples?

The combination of spelt flour, farmer's cheese, and butter creates an exceptionally tender dough that pairs beautifully with the fragrant apple filling. Cinnamon enhances the flavor of the fruit and gives the cookies their warm, homemade aroma.

Ingredients

For the Dough:

  • 250 g spelt flour (type 650)
  • 250 g farmer's cheese
  • 250 g softened butter

For the Filling:

  • 3–4 apples
  • 1–2 teaspoons ground cinnamon
  • 1–2 tablespoons sugar (or to taste)

Instructions

  1. In a large bowl, combine the spelt flour, farmer's cheese, and softened butter. Knead until a smooth, uniform dough forms.
  2. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for about 30 minutes.
  3. Meanwhile, prepare the filling. Wash and peel the apples, remove the cores, and cut them into thin wedges.
  4. Mix the apples with the cinnamon and sugar.
  5. Roll out the chilled dough to a thickness of about 3–4 mm (⅛ inch).
  6. Using a glass or cookie cutter about 8–10 cm (3–4 inches) in diameter, cut out circles.
  7. Place a piece of apple in the center of each circle.
  8. Fold the dough over to form crescent shapes.
  9. Arrange the cookies on a baking sheet lined with parchment paper.
  10. Bake at 180°C (350°F) for 20–25 minutes, or until lightly golden.
  11. Once cooled, dust with powdered sugar.
