Spelt Yeast Wreaths with Cocoa Filling

Soft, buttery, and filled with rich chocolate flavor — these spelt yeast wreaths with cocoa filling are the perfect homemade treat for breakfast, coffee time, or a cozy afternoon snack. The fluffy spelt dough and sweet cocoa swirl make them impossible to resist.


Ingredients

For the dough:

  • 220 ml warm milk
  • 45 g fresh yeast
  • 50 g sugar
  • 80 g butter, melted and cooled
  • 500 g spelt flour (type 650)- purchase here
  • 2 eggs (1 for the dough, 1 for brushing)
  • a pinch of salt

For the cocoa filling:

  • 80 g soft butter
  • 4 tbsp cocoa powder
  • 5 tbsp sugar

Optional:

  • powdered sugar or icing for decorating

Instructions

1. Prepare the yeast starter

Add the fresh yeast and 1 tablespoon of sugar to the warm milk. Stir well and let it sit for 10–15 minutes until foamy.

2. Make the dough

In a large bowl, combine the flour, remaining sugar, and salt. Add the yeast mixture, 1 egg, and the melted butter. Knead the dough for several minutes until smooth, soft, and elastic.
You can also use a stand mixer fitted with a dough hook.

3. Let the dough rise

Cover the bowl with a kitchen towel and leave it in a warm place for about 1 hour, or until doubled in size.

4. Prepare the filling

In a small bowl, mix the soft butter, cocoa powder, and sugar until a smooth cocoa paste forms.

5. Shape the wreaths

Roll the dough into a rectangle and spread the cocoa filling evenly over the surface. Fold the dough in half and cut it into strips. Gently twist each strip and connect the ends to form wreath shapes.

6. Bake

Place the wreaths on a baking tray lined with parchment paper and brush with beaten egg. Bake at 180°C (350°F) using top and bottom heat for about 20 minutes, until golden brown and beautifully risen.

7. Decorate

Allow the wreaths to cool slightly, then dust with powdered sugar or drizzle with icing.


Tips

  • Add a pinch of cinnamon or some chopped dark chocolate to the filling for extra flavor.
  • These wreaths taste best slightly warm.
  • Spelt flour gives the pastries a delicate nutty flavor and extra softness.
