Spelt Pasta with Spinach and Parmesan

Spelt pasta with spinach is a quick and light dish inspired by the Hildegard-style approach to nutrition. According to the teachings of Hildegard of Bingen, cheese should be used in moderation and combined with cumin, which supports protein digestion and makes the dish easier on the body.

Ingredients:
• 400 g pasta (e.g., shells or spirals)- purchase here
• 450 g fresh spinach
• 4 cloves of garlic
• 150–175 ml heavy cream
• 100 g grated Parmesan cheese
• 1–2 tablespoons butter (for frying)
• salt to taste
• cumin to taste - purchase here

Instructions:

1.     Cook the pasta
Cook the pasta in salted water according to the package instructions. Drain and set aside.

2.     Prepare the spinach
Wash the spinach thoroughly. If the leaves are large, roughly chop them.

3.     Sauté the garlic
Melt the butter in a large pan. Add finely chopped garlic and sauté for about 1 minute, until fragrant (be careful not to burn it).

4.     Add the spinach
Add the spinach to the pan and cook until wilted and reduced in volume (about 3–5 minutes).

5.     Make the sauce
Pour in the cream, stir, and simmer over low heat for a few minutes until slightly thickened.

6.     Add cheese and seasoning
Add grated Parmesan, salt, and cumin to taste. Stir until the cheese melts and the sauce becomes creamy.

7.     Combine with pasta
Add the cooked pasta to the sauce and mix well until everything is evenly combined. 

8.     Serving
Serve immediately, ideally topped with an extra sprinkle of Parmesan cheese.
